I used 3 packs 50g Elderberries
1 pack 50g Fine Cut Rosehips
Cup of sugar totally (optional)
Pop the elderberries & rose hips into the pot
Good ol swish
Pour in the sugar and give it another swish (optional)
Pour some water in
Simmer until it starts to look like syrup (if using sugar), strain and cool and pour into dark bottles again be purchased/ordered from Taste in Castletownbere and Organico Bantry.

Elderberries contain a set of complex sugars that are immune-boosting. They are also a great source of vitamin C and contain more phosphorus and potassium than other temperate fruits. Due to their dark color, they are a rich source of antioxidants.
Rose hips are super high in vitamin C (even more so than citrus fruits), which is why they are great for boosting the immune system. They are also a good source of lycopene, which is an important antioxidant. They do contain vitamins A, B, D, and E in varying amounts, as well as flavonoids and some essential fatty acids.
You can omit the sugar and just simmer the elderberries and rose hips, strain and use within one week.
